Pancake day is looming so you need a Pancake Recipe! Pancakes and Shrove Tuesday are a big deal in the UK. Not for the religious reasons which created this great day but for the delightfully delicious pancakes we get to eat. Kids love Pancakes and adults love pancakes so Tuesday the 9th of February should be a day filled with savoury and sweet pancakes alike. We’re talking soft, velvety THIN cakes smothered in something naughty and sweet or wrapped round a tempting savoury filling, not those flabby puffed up excuse for a pancake our American cousins love so much. No Mature Spiced Christmas Fruit Cake Recipe

Yes its January. Yes I”m dieting again but I found this no mature, Spiced Christmas fruit cake recipe in a new magazine subscription I took out and I simply had to document it so I don”t lose it for next year! Its full of Christmas spice, extra moist and a little bit boozy so its everything a Christmas cake should be.

I ended up making this because I ran out of time to make a fully matured Christmas cake and, after visiting the BBC Good Foot Show earlier in the month, I ended up subscribing to the Good Food magazine where I found this gem of a recipe. It”s dead easy to make and will be well suited to anyone with a food mixer. You can mix it by hand if you like but I”m lazy so this “chuck all the ingredients in” approach really suits me.

I’ve not posted any recipes in a while. In fact the last recipe I posted was my hangover dish of a Mexican Breakfast. But while I have a bit of time I’m going to try my hand at cooking a recipe of my own for a nice (relatively) healthy dinner. Its a bit of a mishmash of an Italian Recipe and a Spanish recipe but the results will hopefully be delicious.

The inspiration form this came after looking through Rick Stein’s “Spain” book and then following that up with the Two Greedy Italians cookbook. I fancied a dinner with some spice but also with big and bold flavours and I also wanted it to be quick and easy to cook… oh and healthy too. So off I went to the supermarket not really knowing what exactly I was going for but I had a rough idea in my head. (more…)

Thai Beef Panang CurrySo I ventured out for a family birthday meal this weekend just gone and it was decided Thai meal was in order. We went to the superb Jitlada Thai restaurant on Wellington Street in Luton. A tiny little place with friendly and attentive service and a cost atmosphere. The place is always full and there seems to be a common theme with the food people are ordering. (more…)
