This Smashed Veg Cakes Slimming World recipe is so simple and is very comforting. Potatoes, swede and celeriac combine to make a really tasty and healthy main course and with both celeriac and swede being Slimming World Super Speed foods you can feel like you’re indulging without piling on the calories. If you didn’t want to make these into little cakes you could simply serve the veg mashed up and topped with the sharp onion marmalade however the crust you get on the outside of the cake from frying really adds to the flavour!

I serve this with my delicious Parma ham topped chicken but you can serve with whatever you want. for a light lunch you can even top one of the cakes with a soft poached egg!

I love an onion bhaji and whats more I love a Healthy Onion Bhaji! The problem is that most onion bhaji’s are not low fat and are not healthy so eating them on a diet is a big no-no. Lovely onion mixed in a spiced batter and then deep fried until crispy is a perfect accompaniment to any Indian curry so I need to come up with a Healthy Onion Bhaji Low Fat Recipe. I’ve got a cracking and quick deep fried onion bhaji recipe but the problem is that they are just to damn unhealthy when your trying to lose weight so the recipe I’ve got wasn’t appropriate for my needs.
