Courgette Spaghetti: Healthy Pasta Alternative

Courgette Spaghetti? Really?? Courgette instead of pasta?? That was my response when the wife told me about this when coming home from Slimming World one night. I couldn’t bring myself to get excited about cooking a typical pasta dish and replacing the pasta with a low calorie “Speed” food. I saw the logic behind why you would want to it but pasta is comforting, has great texture and is a great carrier of flavour. I could’t see how Courgette Pasta would give me the same gratification as a normal pasta dinner. Last night I decided to give it a try. Would it be good or would my instincts be right?

Courgette Spaghetti Vs Pasta

Here’s some facts. A typical portion of pasta is 100 grams. That would set you back around 370 calories. The same weight of courgette is just 17 calories. That’s a saving of over 300 calories! When i saw the difference I simply had to give it a go. If I could make something nice out of this then it was a sure winner for Slimming World weight loss.

Making Courgette Spaghetti

If you’re handy with a knife then you can, of course, julienne courgettes in this way. I’m lazy though so I got myself an inexpensive Julienne Peeler. Click on the link to be taken to an Amazon page showing the one I have. Any would do but this one is cheap, has good reviews and looked to be sturdy.

Take your Julienne Peeler as well as your courgettes and take long strokes to create your spaghetti. Keep going until you hit the spongy core of the courgette. throw this bit away as it very watery and doesn’t have good texture.

I decided to fry the courgette spaghetti in a little Frylight for a couple of minutes. This gets rid of some excess moisture and makes it more firm or “al denté” like pasta should be.

I served mine with creamy ricotta tossed through (part of your healthy A) and oven dried tomatoes. It was really quite nice and did all the flavour carrying you would expect of a pasta. The only thing I would say is that it wasn’t quite as textured as a pasta but for the calories, I’ll be happy to live with that compromise.
