A Slimming World Spaghetti Carbonara recipe… can it be true?! Certainly is and its Syn free when you use your Healthy A allowance!

I haven’t posted in a while so I thought I’d post a belter of a recipe for all of you Slimming World lovers. And what better way to break the silence than with this super Slimming World Spaghetti Carbonara recipe. It’s my take on a classic Spaghetti Carbonara but I’ve used some excellent elements form Jamie Oliver’s “Skinny Carbonara” from his Everyday Super Foods book. Its a great book which works well for Slimming World with a few adaptations.  Keeping with the ethos that one third of your plate should be filled with speed foods, I’ve taken heed of that by using one third of my DIY Courgette Spaghetti. If you don’t want to use courgette then feel free to exclude but be sure to chuck in some other speed veg of your choosing.

Traditional Spaghetti Carbonara is super comforting and delicious but has masses of calories in it thanks to the rendered Pancetta (or bacon) fat along with oodles of Parmigiana cheese and loads of egg yolks. To cut the calories down and remove all of those Syns, we’re still going to use eggs but we’ll cut it with some fat free yoghurt to give the Spaghetti Carbonara a Slimming World make over. We’ll also use smoked bacon with all the fat removed fried and then poached in some stock to get that smoky flavour all in to the pasta sauce. Add to that some smashed minted peas and you’ve gone an indulgent dinner with no Syns! If you wanted to increase the flavour for a few syns you could replace the “no fat” bacon with Pancetta or smoked streaky bacon. Each rasher of bacon will set you back 2 syns so its entirely up to you how much you want to put in there. You’re a vegi? NO problem! Just substitute the bacon for Quorn Bacon Slices!

Instructions
  1. Boil the spaghetti according to the packet instructions and drain when ready, ensuring some of the starchy water is retained for later on.
  2. Shred your courgettes in to spaghetti strips and set aside.
  3. Slice the bacon into thin strips and place in a medium hot frying pan with a little Fry Light. Cook until there is good colour on the bacon.
  4. Add the stock to the pan and reduce the heat to as low as it will go. Allow the bacon to infuse in the liquid for a few minutes.
  5. Mix the eggs, yoghurt and Parmesan cheese in a bowl.
  6. Cook the peas in a microwave or boil for a few minutes until soft. Mash the peas in to a rough paste with the mint leafs.
  7. Add the cooked pasta to the frying pan with the courgette spaghetti and toss to mix in the bacon infused stock.
  8. Remove from the heat and allow to cool for 3 minutes.
  9. Still off the heat, add the egg mixture to the pan while constantly stirring. This should go creamy and coat the spaghetti.
  10. Serve the pasta in large bowls and add random dollops of the pea mixture all over the pasta. Finish with a flourish of Parmesan and a mint leaf.
