Canarian Potatoes & Green Mojo Sauce or Papas Arrugadas con Mojo Verde is so simple and such a delight to eat! This recipe will having you coming back time and time again. Having just returned from a lovely week in Lanzarote, it has reaffirmed my love for these salty wrinkly potatoes smothered in a sharp tangy Mojo Sauce. Mojo Sauce and Canarian Potatoes were served with pretty much every meal and each restaurant had slightly differing versions of the classic sauce. The Mojo sauce not only goes well with potatoes but pretty much all fish and meat! Whats more, it will keep in the fridge for a good couple of weeks! 

Typically, the Mojo sauce is made with lots of Olive Oil so to make it syn free on Slimming World, we’re going to use natural fat free yogurt instead. It’s dead easy to make the Mojo sauce. For the Canarian Potatoes you want a new waxy variety such as Charlotte potatoes.

Serve this with some simply grilled meat or fish.

Ingredients
Green Mojo Sauce (Mojo Verde)
Canarian Potatoes (Papas Arrugadas)

Instructions
For the Green Mojo Sauce
  1. Put all the ingredients for the Mojo Sauce in a food processor or blender and blitz until smooth and vibrant. The texture should be that of double cream once blended sufficiently.
  2. Check for seasoning, heat and tartness. Add any more of the ingredients to suite your taste.
For the Canarian Potatoes
  1. Add the salt and potatoes to a pan and add only enough water to just cover the potatoes. Put a lid on and bring to the boil.
  2. When boiling turn down the heat to a simmer and cook until all the potatoes are tender.
  3. When cooked remove nearly all the water from the pan and put back over the heat
  4. Keeping the potatoes moving all the time, cook away the water to leave a salted crust on the potatoes.
  5. Serve with lots of the green Mojo Sauce on a dipping bowl.
