Having just returned from a lovely week in Lanzarote, it has reaffirmed my love for these salty wrinkly potatoes smothered in a sharp tangy Mojo Sauce. Mojo Sauce and Canarian Potatoes were served with pretty much every meal and each restaurant had slightly differing versions of the classic sauce. The Mojo sauce not only goes well with potatoes but pretty much all fish and meat! Whats more, it will keep in the fridge for a good couple of weeks!
Typically, the Mojo sauce is made with lots of Olive Oil so to make it syn free on Slimming World, we’re going to use natural fat free yogurt instead. It’s dead easy to make the Mojo sauce. For the Canarian Potatoes you want a new waxy variety such as Charlotte potatoes.
