This Smashed Veg Cakes Slimming World recipe is so simple and is very comforting. Potatoes, swede and celeriac combine to make a really tasty and healthy main course and with both celeriac and swede being Slimming World Super Speed foods you can feel like you’re indulging without piling on the calories. If you didn’t want to make these into little cakes you could simply serve the veg mashed up and topped with the sharp onion marmalade however the crust you get on the outside of the cake from frying really adds to the flavour!
I serve this with my delicious Parma ham topped chicken but you can serve with whatever you want. for a light lunch you can even top one of the cakes with a soft poached egg!

Healthy Onion Bhaji Low Fat Recipe
I love an onion bhaji and whats more I love a Healthy Onion Bhaji! The problem is that most onion bhaji’s are not low fat and are not healthy so eating them on a diet is a big no-no. Lovely onion mixed in a spiced batter and then deep fried until crispy is a perfect accompaniment to any Indian curry so I need to come up with a Healthy Onion Bhaji Low Fat Recipe. I’ve got a cracking and quick deep fried onion bhaji recipe but the problem is that they are just to damn unhealthy when your trying to lose weight so the recipe I’ve got wasn’t appropriate for my needs. Chicken, Soy and Honey combine to create a sticky sauce which works so well together. This recipe is so simple as well there is no excuse not to cook it. This is my own variation of a recipe I saw on the BBC’s Good Food TV show with Tom Kerridge. While the original recipe makes a great chicken dish, I wanted to make it more Asian inspired so I added Chinese Five Spice, a bit of grated ginger and some red chilli for a nice kick!
Its been a while since I’ve posted a recipe but I have a belter of a Mexican Breakfast Recipe.. its perfect hangover food. That”s not to say I’ve not been cooking because I have… lots… and getting fat in the process. As I sit here typing this post it pains me to say I’m on a diet. I’ve eaten like crap since Christmas and I swore every week I would start to lose weight. So while I can’t eat, I can at least, write about it. (more…)
This recipe is a show stopper! This is the perfect marriage of chicken thighs, spice and a refreshing cucumber salad. This is dead simple and is something you can prepare a little in advance if you’re having a lazy camping day, a BBQ or just want something super tasty yet light. Unfortunately, I can’t take the credit for this as it’s actually a Bill Granger recipe but I love its simplicity so much. It’s perfect for a balmy summer evening and perfect for cooking on a barbecue! This serves 4 people nicely.
Normandy chicken with Apples, Cider, Brandy and Cream
I’ve nicked this recipe from the mother in-law after she cooked me Normandy Chicken one Saturday evening. Often we cook with wine but not often do you associate Apples, or in this case cider, with chicken. Normandy is known for its apples, cream and brandy so this recipe for Normandy Chicken brings them all together in comfort food bliss. This is a one pot wonder which makes it great for cooking while camping and equally as good while sitting at home on a Saturday evening! Serve with some mashed potatoes to soak up the lovely sauce!
Pork… good. Lemon grass… GOOD! Put them together and its very goooood! So its well worth trying this version of Vietnamese Pork with Lemon Grass! (more…)

Everyone loves a good Chinese meal and its unfortunate that most people decide to order a Chinese take away rather than having a go at cooking one themselves. Having got my hands recently on the Hairy Bikers Asian Adventure book (purchased from amazon UK), I was pleased to see a directory of Chinese Supermarkets listed by county so I decided it was time I paid one a visit.
