Canarian Potatoes & Green Mojo Sauce or Papas Arrugadas con Mojo Verde is so simple and such a delight to eat! This recipe will having you coming back time and time again. Having just returned from a lovely week in Lanzarote, it has reaffirmed my love for these salty wrinkly potatoes smothered in a sharp tangy Mojo Sauce. Mojo Sauce and Canarian Potatoes were served with pretty much every meal and each restaurant had slightly differing versions of the classic sauce. The Mojo sauce not only goes well with potatoes but pretty much all fish and meat! Whats more, it will keep in the fridge for a good couple of weeks!  (more…)

Courgette Spaghetti: Healthy Pasta Alternative

Courgette Spaghetti? Really?? Courgette instead of pasta?? That was my response when the wife told me about this when coming home from Slimming World one night. I couldn’t bring myself to get excited about cooking a typical pasta dish and replacing the pasta with a low calorie “Speed” food. I saw the logic behind why you would want to it but pasta is comforting, has great texture and is a great carrier of flavour. I could’t see how Courgette Pasta would give me the same gratification as a normal pasta dinner. Last night I decided to give it a try. Would it be good or would my instincts be right? (more…)

This Smashed Veg Cakes Slimming World recipe is so simple and is very comforting. Potatoes, swede and celeriac combine to make a really tasty and healthy main course and with both celeriac and swede being Slimming World Super Speed foods you can feel like you’re indulging without piling on the calories. If you didn’t want to make these into little cakes you could simply serve the veg mashed up and topped with the sharp onion marmalade however the crust you get on the outside of the cake from frying really adds to the flavour!

I serve this with my delicious Parma ham topped chicken but you can serve with whatever you want. for a light lunch you can even top one of the cakes with a soft poached egg!

I love an onion bhaji and whats more I love a Healthy Onion Bhaji! The problem is that most onion bhaji’s are not low fat and are not healthy so eating them on a diet is a big no-no. Lovely onion mixed in a spiced batter and then deep fried until crispy is a perfect accompaniment to any Indian curry so I need to come up with a Healthy Onion Bhaji Low Fat Recipe. I’ve got a cracking and quick deep fried onion bhaji recipe but the problem is that they are just to damn unhealthy when your trying to lose weight so the recipe I’ve got wasn’t appropriate for my needs. Spicy Chicken Thighs with Cucumber and Cashew Noodle Salad

This recipe is a show stopper! This is the perfect marriage of chicken thighs, spice and a refreshing cucumber salad.This is dead simple and is something you can prepare a little in advance if you’re having a lazy camping day, a BBQ or just want something super tasty yet light. Unfortunately, I can’t take the credit for this as it’s actually a Bill Granger recipe but I love its simplicity so much. It’s perfect for a balmy summer evening and perfect for cooking on a barbecue! This serves 4 people nicely.
