It’s CHRISTMAS!!!! Christmas just wouldn’t be Christmas without a Christmas sausage roll recipe. Unfortunately, I’ve never really found a decent shop bought Sausage Roll and I’m always left disappointed by the flavourless pappy taste you get left with. The sausage meat is flavourless, the pastry is utterly dry and the whole thing is so overpriced! I find it astonishing that a humble Sausage Roll is one of the first things you buy for that Christmas or Boxing Day buffet but its normally one of the most disappointing.
A sausage roll can be one of the most delicious things to eat on the planet and I’m sick of being deprived of one of my favourite things! So this Christmas I have embarked on a quest to make the ultimate Festive Christmas Sausage Roll recipe and I’ve come up with a bloomin’ good one too! (more…)
Canarian Potatoes & Green Mojo Sauce or Papas Arrugadas con Mojo Verde is so simple and such a delight to eat! This recipe will having you coming back time and time again. Having just returned from a lovely week in Lanzarote, it has reaffirmed my love for these salty wrinkly potatoes smothered in a sharp tangy Mojo Sauce. Mojo Sauce and Canarian Potatoes were served with pretty much every meal and each restaurant had slightly differing versions of the classic sauce. The Mojo sauce not only goes well with potatoes but pretty much all fish and meat! Whats more, it will keep in the fridge for a good couple of weeks! (more…)

I haven’t posted in a while so I thought I’d post a belter of a recipe for all of you Slimming World lovers. And what better way to break the silence than with this super Slimming World Spaghetti Carbonara recipe. It’s my take on a classic Spaghetti Carbonara but I’ve used some excellent elements form Jamie Oliver’s “Skinny Carbonara” from his Everyday Super Foods book. Its a great book which works well for Slimming World with a few adaptations. Keeping with the ethos that one third of your plate should be filled with speed foods, I’ve taken heed of that by using one third of my DIY Courgette Spaghetti. If you don’t want to use courgette then feel free to exclude but be sure to chuck in some other speed veg of your choosing. (more…)
Courgette Spaghetti? Really?? Courgette instead of pasta?? That was my response when the wife told me about this when coming home from Slimming World one night. I couldn’t bring myself to get excited about cooking a typical pasta dish and replacing the pasta with a low calorie “Speed” food. I saw the logic behind why you would want to it but pasta is comforting, has great texture and is a great carrier of flavour. I could’t see how Courgette Pasta would give me the same gratification as a normal pasta dinner. Last night I decided to give it a try. Would it be good or would my instincts be right? (more…)
Pancake day is looming so you need a Pancake Recipe! Pancakes and Shrove Tuesday are a big deal in the UK. Not for the religious reasons which created this great day but for the delightfully delicious pancakes we get to eat. Kids love Pancakes and adults love pancakes so Tuesday the 9th of February should be a day filled with savoury and sweet pancakes alike. We’re talking soft, velvety THIN cakes smothered in something naughty and sweet or wrapped round a tempting savoury filling, not those flabby puffed up excuse for a pancake our American cousins love so much. This Smashed Veg Cakes Slimming World recipe is so simple and is very comforting. Potatoes, swede and celeriac combine to make a really tasty and healthy main course and with both celeriac and swede being Slimming World Super Speed foods you can feel like you’re indulging without piling on the calories. If you didn’t want to make these into little cakes you could simply serve the veg mashed up and topped with the sharp onion marmalade however the crust you get on the outside of the cake from frying really adds to the flavour!
I serve this with my delicious Parma ham topped chicken but you can serve with whatever you want. for a light lunch you can even top one of the cakes with a soft poached egg!

Healthy Onion Bhaji Low Fat Recipe
I love an onion bhaji and whats more I love a Healthy Onion Bhaji! The problem is that most onion bhaji’s are not low fat and are not healthy so eating them on a diet is a big no-no. Lovely onion mixed in a spiced batter and then deep fried until crispy is a perfect accompaniment to any Indian curry so I need to come up with a Healthy Onion Bhaji Low Fat Recipe. I’ve got a cracking and quick deep fried onion bhaji recipe but the problem is that they are just to damn unhealthy when your trying to lose weight so the recipe I’ve got wasn’t appropriate for my needs. Chicken, Soy and Honey combine to create a sticky sauce which works so well together. This recipe is so simple as well there is no excuse not to cook it. This is my own variation of a recipe I saw on the BBC’s Good Food TV show with Tom Kerridge. While the original recipe makes a great chicken dish, I wanted to make it more Asian inspired so I added Chinese Five Spice, a bit of grated ginger and some red chilli for a nice kick!
Its been a while since I’ve posted a recipe but I have a belter of a Mexican Breakfast Recipe.. its perfect hangover food. That”s not to say I’ve not been cooking because I have… lots… and getting fat in the process. As I sit here typing this post it pains me to say I’m on a diet. This recipe is a show stopper! This is the perfect marriage of chicken thighs, spice and a refreshing cucumber salad.This is dead simple and is something you can prepare a little in advance if you’re having a lazy camping day, a BBQ or just want something super tasty yet light. Unfortunately, I can’t take the credit for this as it’s actually a Bill Granger recipe but I love its simplicity so much. It’s perfect for a balmy summer evening and perfect for cooking on a barbecue! This serves 4 people nicely.
